Junior Sous Chef

The Milestone Hotel, part of The Red Carnation Hotel Collection now seek a Junior Sous Chef to join a motivated team in providing guest with exquisite Traditional English Cuisine at The Cheneston Restaurant and In Room Dining.

The Milestone Hotel overlooks Kensington Palace and Gardens, also a short walk from The Royal Albert Hall. This Grade II listed building holds 44 individually designed bedrooms, 12 luxury suites and 6 long-stay apartments. Key responsibilities include:

  • Working with the Executive Chef overseeing the daily kitchen operation
  • Ensuring that all kitchen stations deliver to the required standard with the support of the Executive Head Chef
  • Managing and motivating a team of 10-12 Chefs and 4 Kitchen Porters
  • Assisting the Senior Sous Chef/Executive Chef with financial planning and budgeting
  • Ensuring that health and safety, food hygiene and fire prevention regulations are adhered to
  • Assisting in food ordering, purchasing and rotating
  • Training and developing staff

The ideal candidate should:

  • Have previous experience in a similar role in a four or five star hotel or fine dining restaurant
  • The successful candidate will already have had some experience of managing a small team in the Exec Chef’s absence
  • Have an understanding of ordering and cost control
  • Be able to work well under pressure
  • Have a good level of English
  • Have a friendly, flexible and professional attitude
  • Excellent written and spoken English
